Easy Ice Cream Cake Recipe {Single Serving}

You love the Ice Cream Sandwich Cake, but don’t feel like making a whole cake? Make a single serving Ice Cream Cake! It’s much cheaper than Dairy Queen or Baskin Robbins birthday cakes, and it’s so easy! Give this DIY ice cream cake a try, and I bet it will be your new favorite!!

Get creative!! Crumble up Oreo cookies to make the crust, center or topping. Or, you can use your favorite cookie (Girl Scout cookies are great for this!} or candy bar.  I used chocolate and caramel ice cream toppings, but you could use hot fudge, shavings from a chocolate bar – or even melt some white chocolate. Go with what your family loves, and this will be a huge hit!

Did I mention how easy this was to make?  Just unwrap ONE ice cream sandwich, cut in half with a knife you’ve run under hot water, place on a plate and drizzle your favorite topping as a center layer (if desired) – I used caramel and chocolate topping.  Add the second half on top and a dollop of non-dairy whipped topping (such as Cool Whip).  Add whatever treats to the top (I drizzled caramel on it) and enjoy!

This easy, tasty DIY No Bake Ice Cream Cake takes less than 10 min and costs $4 (compare to Dairy Queen, Baskin Robins or Carvel for $30+! Customize as desired with cookies, candy bar or chocolate!
Ingredients
  • 1 ice cream sandwich
  • non-dairy whipped topping for “frosting”
  • Choice of topping and filling (Oreos, Girl Scout cookies, cookie dough, candy bar such as Kit Kat, Twix or Hershey’s chocolate bar shavings, chocolate syrup, hot fudge, caramel ice cream topping, melted white chocolate, etc.)
Instructions
  1. Unwrap the ice cream sandwich and cut in half with a knife (run under hot water to cut easier)
  2. Place half on a plate.
  3. Add a center layer (if desired) – I used caramel and chocolate topping.
  4. Then add a top layer and “frost” with non-dairy whipped topping (such as Cool Whip).
  5. Add whatever treats to the top (I drizzled caramel on it) and serve!
